Happy Mom’s Day One Day Early!

The Royal Mom actually contributed to today’s menu by giving me the recipe we’re going to do today.    I didn’t get her to help out because it’s Mom’s Day weekend and she deserves a break as do all Moms.     This recipe has all the stuff my Mom loves in it – bacon, honey, cream cheese, beautiful fluffy bakery croissants, and blueberries.   This is a great “special occasion” kind of breakfast treat but actually – isn’t EVERY day special when you’re having bacon??????

The Royal Mom and I also want to thank all of you who knew May 10th was our 13th blogaversary.   Mom and Angel Sammy started the blog in 2011 and when Sammy went to the Bridge I took over his regular spots including Bakin’ With Bacon.    BIG HUGS……………..

 

Blueberry-Bacon Croissants

 

INGREDIENTS

  • 8 ounces cream cheese softened to room temperature
  • 2 tablespoons honey
  • 2 slices fully-cooked crispy bacon chopped
  • 1/2 cup heavy cream
  • 1/4 cup whole milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/8 teaspoon freshly-grated ground nutmeg
  • 2 tablespoons unsalted butter
  • 4 store-bought croissants cut in half lengthwise
  • 1 cup of blueberries
  • softened butter and 100% pure maple syrup for serving

DIRECTIONS

  • In a medium bowl, mix together the cream cheese and honey. Gently fold in the bacon and set aside.
  • In a large shallow bowl, whisk together the heavy cream, milk, eggs, vanilla extract, cinnamon and ground nutmeg. Set aside.
  • Melt the butter in a large nonstick skillet over medium heat. Taking each croissant half, dip it fully into the egg mixture, making sure to coat each side. Carefully add it to the hot pan. Repeat 2-3 times depending on how large your skillet is. Try not to overcrowd the pan. Cook for 2 minutes on each side, or until browned to your liking. Repeat for the rest of your croissant halves.
  • Spread the the bacon-cream cheese mixture onto 4 of the croissant halves and place a handful of blueberries on top. Place the remaining 4 croissant halves on top. Garnish with additional blueberries and serve with butter and/or 100% maple syrup if desired. Enjoy immediately!

 

Would it be wrong to make a bigger batch of these and have TWO?   Of course not.   After all – this is just too yummy to stop at one!   Before I go, I want to wish everyone – especially Moms – a wonderful day tomorrow…………….!!

 

Friendly Friday Fill-Ins

Here are this week’s sentences!    Since you all seemed to enjoy that I gave my Dad a chance to pawticipate with me (or me and Mom) last week, I’ll give him another chance to play along this week too.    Ready?     MOM = RED    TEDDY = BLUE   DAD = GREEN


1. Life is too short to tolerate wasting even one minute – go for the gusto while you can – we never know when our time will be up!.
2. Having faith gives me hope.
3. I’ve been feeling rather masterful and brave because I got rid of a BIG hornet nest I found by our garage before any of us got stung!.
4. I’m well aware that my size/weight is a bit odd.  (usually a cat my weight is told to lose weight and my vet says I’m just a HUGE-BONED cat and don’t “need” to lose weight….now I’m sure he wouldn’t MIND if I did but I’m not under any pressure!!)

There you have it – fill-ins by the WHOLE FAMILY – AGAIN!    Can’t promise that next week or the week after but while I can get their cooperation, I’ll give it a whirl!!!!

Thankful Thursday and Poetry with Angel Sam

Happy Thankful Thursday and thank you to our hosts for keeping this wonderful blog hop going.   It’s a favorite thing for all of us who participate!    I’m very thankful this week that Mom mowed our lawn in between rainy days because – well – I have kind of short legs and wading through deep grass is NOT my favorite thing.   I do enjoy eating grass but not working my way through thick, high grass.   Anyway, I was able to graze easier after Mom mowed.   I’m also very thankful that we have a whole lot of birds, chipmunks, squirrels and birds around here because while I never catch anything (Mom says “thankfully”!) I like to chase!   Good exercise you know.

I hope so!    This is my favorite day because I get to enjoy being with all my friends before flying back to the Rainbow Bridge to fly around and do good deeds AND conduct my Poetry Seminars!

Thank you Daddy for mowing the lawn down low

The Easter Bunny says long grass makes him go too slow!

I want him to be able to bring me Eggs and Candy

And with the lawn trimmed up it will be just dandy!

My Easter party with my friends today will be so much fun

I can’t WAIT until they get here and the decorating is done

By the way Daddy, you look really swell

But would you please change your clothes before my friends ring the bell???????

 

Gotta hand it to this guy – he’s doing his thing no matter what the neighbors think.   Anything for his little daughter!!    What a guy…………and he looks rather nice in his outfit – I had no idea they made ballet tutus in that size!    HAHAHAHAHA

Time For Us To Tell All About the Teaser!

Well it turns out that we had an EXTRA GOOD Teaser yesterday – nobody guessed it!    That’s right – nobody.    It was what we would call a WHOPPER of a Teaser.   So let’s get started shall we?

Teaser Tuesday Class Time

Howdy students.   We have a great GUEST TEASER photo for you today so hang on – we’ll be showing it to you as soon as we get some “business”out of the way.    Business?  Why yes – for instance we need to remind you of the RULES for Teaser – first and foremost – and please obey the rules.  It’s important to let everyone have a chance.

Toughie?   Oh yes indeed – at least WE think so – but someone is always (mostly always) able to figure the Teaser photos out so it’s YOUR turn now to do that.

While everyone is agonizing over the photo – the Cheer Team will try to cheer you up – I see a lot of grumpy faces in class right now – THEN after that we’ll go eat something in the cafeteria….that USUALLY brings some smiles.
