Need a good reason to grow eggplant? Start with this amazing breakfast sandwich. That’s what I do as a Central Florida gardener. Eggplant is super easy to grow and delicious breakfast, lunch and dinner. Eggplant loves our warm climate. And I love eggplant! But at times I grow tired of eating sautéed eggplant, Italian style, and prefer to mix it up a bit. I like to vary my diet and I’ve recently discovered the most delicious way to serve up this gem. Meet the Eggplant-Egg Breakfast Sandwich.

Eggplant Breakfast Sandwich

I sautéed two slices of eggplant in olive oil, adding a dash of salt and pepper during the process. (Above the eggplant is pictured sliced in lengths, but for my sandwich, I sliced in rounds for a better “fit.”) Once golden brown, I removed the eggplant from the pan and set it aside on a plate. In the same pan, I sautéed two cups of fresh spinach in olive oil along with a few dashes of garlic powder until soft, then set it aside on the plate. In the same pan, I fried an egg in prepared garlic butter and then set it aside, too. I cooked my egg over medium, so the yolk wouldn’t drain from my sandwich. Finally came the bread. I used a thick slice of bakery fresh multi-grain bread (12 grain seeded variety) and sautéed it in the same pan, grilled cheese style, using another dollop of garlic butter. For this recipe, I used prepared garlic butter, but you can create your own by adding garlic salt, garlic powder, salt and fresh basil to softened butter.

eggs and spinach sandwich

My sandwich was layered bread in the order: egg, eggplant, spinach, eggplant and topped with a sprinkle of Parmesan cheese. I deleted a bread top for an open-faced sandwich meal. This egg sandwich was amazingly delicious!!

Today the 7th Annual Authors in Bloom Blog Hop begins! Oh, how I LOVE spring. Not only do April showers bring out the best in my flowers, my vegetable garden is brimming with beautiful bounty!! Woohoo! authors in bloom giveaway But I digress. You’re here for wonderful gardening tips and fabulous recipes and you’ve come to the right place. I’m about to share you THE most decadent healthy dessert you’ve ever unleashed on your taste buds. I’m not kidding. Have you heard of the “raw” eating health craze? It’s basically where you consume all your food in its purest, raw form. Nothing cooked that could kill the nutritional value. Nothing artificial or unhealthy. This recipe is the bomb.

An adaptation of a recipe created by Debbie Waddell, Vegan Brownie Bites, I’ve added a twist. A non-vegan twist, (unless you use non-dairy whipped cream), this dish will fool even the most discriminating chocolate lovers.

vegan brownieHEALTHY BROWNIE PARFAIT

1/2 Cup Walnuts (or Pecans)

2 TBSP Unsweetened shredded coconut

1/2 Cup Medjool Dates pitted

2 TBSP Raw Cacao Powder

1/4 tsp Pure Vanilla extract

1/4 tsp Cinnamon

2 tsp Honey

1 TBSP Crushed raspberries

Dollop of whip cream

PREPARATION

Place the nuts in a food processor and blend until almost a flour consistency.  Add the remaining ingredients and process until the mixture forms a dough like consistency. Using your hands, take a small amount and roll into a ball. Wedge into the bottom of a small glass. Spoon raspberries over brownie and top with whipped dream. Delicious!

The recipe will make approximately 8-1 inch balls of dough. I actually used 2 balls of dough for this dessert glass (size of a shot glass).

Can be stored in the refrigerator for several days–though it won’t last!!

Prefer to remain vegan and eliminate the cream? No worries! It’s just as decadent without it.

A feisty ballerina with a broken heart. A minister-in-training whose faith can work miracles. Can two strong-willed people find true love and a match made in heaven?

JESSICA & JAMES: A Love Story is a boxed collection of two romances set in Snow Valley, Montana—the saga of rising star ballerina Jessica and the sparks that fly between her and gorgeous James Douglas, the new pastor in town.

This collection includes new chapters, and a Brand New Bonus Wedding novella!

Suffering with a broken heart, Jessica has struggled to forgive herself for that fateful night when her childhood love was killed in a car accident. After staying away from home for years, she finally returns for Christmas and meets James Douglas who is unlike any minister-in-training she’s ever known. James can not only dish back Jessica’s finely tuned sarcasm but understands grief all too well, turning Jessica’s world and her faith upside down. Is she ready to take another risk on love?

Living 2,000 miles apart proves difficult and Jessica and James’ love is tested in a myriad of ways, but James can’t get the spitfire Jessica out of his mind. When she comes home to Snow Valley to accept an inheritance with her male ballet partner in tow, James and Jessica’s passion for each other takes on a new edge.

Clean romance with heart, and a surprise wedding you won’t see coming.

A Great Love Story for everyone!

This was a very moving romance about loss and moving forward with life and forgiveness. It shows how much we can inhibit our growth after a devastating event. Recommend this collection for teens to adults, along with a few Kleenex. Have liked the Snow Valley Series. Wish it was a real place to go and visit for Christmas!

I absolutely loved this book! It is a touching & emotional story about family, friendship, love, and faith. I thoroughly enjoyed reading the story of Jessica & James. A MUST READ FOR EVERYONE!!!

All those Happily Ever After lovers out there, this is a story for you to grab, snuggle up with a comfy blanket and get lost in the love story of two characters who are not perfect but growing, healing and learning to love and be loved. Be warned that you might just be sucked into it and not want to set it down or to say goodbye to these characters once the final page has been read. I can’t recommend this one enough.

More Romance by Kimberley!

Pastor James Douglas saw the girl sitting in the snow when he glanced up from his computer screen in his church office. Papers and research books were strewn across the oak surface of the old desk, including two different translations of the Bible–open and underlined in red pencil where he was marking various lines for this week’s Sunday School class he was teaching.

James ran a hand through his hair and rubbed his eyes. When he glanced at the clock on the wall, he blinked in surprise. It was already one o’clock. No wonder he was starving.

Leaning forward, he glanced through the window again, curious. It wasn’t often he saw such a striking woman around Snow Valley, which was more known for mud-splattered cowboy boots, wind-blown hair, and chapped cheeks—all definitely had their small-town charm. But this girl—she—

She hadn’t moved an inch in five minutes. James jumped up from his chair, knocking the back of it into the wall. His heart crept into his throat, worry tugging at him. It was only ten degrees out in the church cemetery. Piles of snow lay drifted about the bleak shrubs, turning to slush across the parking lot. Who came to visit the church cemetery just after a snowstorm—in the middle of December? Of course, people came to lay flowers and Christmas wreaths, but they never stayed longer than two minutes before hurrying back to their cars.

She was truly beautiful. Blonde hair flying away from her face in clouds, porcelain skin, a perfectly sculpted body. As a pastor, he wasn’t supposed to notice that, he supposed, but to him she was the picture of perfection. Yet she looked so tragically sad, so lost, so very fragile sitting there, her eyes glued to the headstone. Who was she mourning?

His nose hit the window pane as his eyes glued to her crouched figure. The young woman didn’t look well. He had a sudden irrational fear that she’d actually frozen into place. Should he call the police, or an ambulance? Two seconds later, he was slamming through the door of his office, grabbing his coat and stuffing his hands into gloves. Then he was sprinting through the graveyard gates, hoping he wasn’t too late to save her.
