Favorite summer time treat... hmm... how do I narrow it down? Diet Coke in the 32 oz-er with lime. mm... Sonic happy hr? Or fresh fruit this summer.. uhh... yum. Also been diggin on the cotton candy flavor ice cream from cold stone. No add ins, just the ice cream. :) Dont ask a prego about food.

I Love the salad with cucumbers, tomatoes, and red onion with seasoned vinegar and salt. It's good year round, but best in the summer when the veggies are fresh from the garden!!

love that blankie sara, you are just too talented! my favorite summertime treat is ice cream, of course and my favorite salad is a sort of mexi salad...romaine lettuce, black beans, corn, chopped tomatoes, cheese and then you crush nacho cheese doritos on top, i know sounds gross, but it's quite delicious....add chopped avocadoes on top and serve with salsa ranch dressing, it's too die for!

In the summer I like to chop up some apples, bananas, add some grapes, raisans, and mini marshmellows. Toss it all with some cool whip-delicious and kids love it too!

My fave salad is my super easy chicken salad. I just chop grilled or roasted chicken, onion, and a few handfuls of dried cranberries. Add some mayo and salt and pepper to taste. It is delicious and simple!

Oh I'm guessing you're looking for something more than "Cafe Rio Pork Salad" for my salad answer? Hehehe. You know how much I looooove that one! As far as at home salads, I made a pretty tasty one yesterday that was just tossed greens, shredded chicken, 1 T crumbled bacon, 1 T parmesan and italian dressing. yum yum. Kind of caesar-ish without the fatty caesar dressing.

As far as salads go, Top Ramen Chicken Salads is one of my all time favorites. ( http://www.cooks.com/rec/view/0,1739,158168-240192,00.html )
Basically you cook and cool some chicken breasts, chop them. You crunch up the (ramen) noodles. Add cabbage, peppers, onions, water chestnuts and then add the chopped chicken. After that, make the dressing with sugar, lemon juice, oil, salt and pepper and the contents of two Ramen soup packets. Mix everything well, add sesame seeds and the dressing, and there you have it!
My favorite summer time treat is something cool like fruit...I love fresh fruit...or a popsicle. An iced coffee (decaf) on those hot days always tastes great.

I also love a nice fresh green salad (preferably from the garden) with tomato, a little onion, feta cheese, raisins, sliced almonds or sunflower seeds, cucumber, maybe some fresh summer squash and possibly some green beans fresh from the garden.

Cherry tomatoes, english cucmbers, soft mozerella cheese all diced. Mix in fresh basil, salt, pepper, evoo. LOVE. I make this almost everyday.

I was looking through your post and was like "aww that is such a cute blanket" then I saw that the contest goes till the 30th, so here I am :)!
My favorite summertime treat is as follows: I love to eat orange sherbet in a bowl and then put a waffle cone upside down on top of the ice cream (like you were eating a cone and it fell over into the bowl). Then as I eat the ice cream I break up the waffle cone! It is very delicious (as ice cream always is) but you don't have to get sticky fingers! love ya!
oh also I don't have a creative salad just your basic lettuce, tomato, cucumber, with a delicious ranch (I like the ranch that's kind of runny)

Our fav salad this summer has been Cookie Salad
2 small instant french vanilla pudding
2 cups buttermilk
mix
then fold 12 oz cool whip
3 small cans mandarin oranges
1 can pinapple chunks
purple grapes
break up Keeble fudge stripe cookies

I love ice cream... although I can't say I limit it to summer! I also love all the fresh produce, though.
Fav salad: Chicken Salad W/ White Grapes
4 Chick breasts, cooked and shredded
1/2 c chopped celery
1/4 c chopped vidalia onion
3/4 c white grapes, sliced twice each
1/2 c sweet pickle relish
1/2 c miracle whip (or more)
1/2 tsp season salt
1/4 tsp fresh ground pepper (or more)
Mix it all together gently, serve on ritz crackers, on a bed of lettuce or on slices of toasted wheat bread. Incredible!

My fave salad is at CPK and my SIL sent me a recipe for a knock off version. I love it!
Lettuce (mix of romaine and iceberg)
Chicken breasts
BBQ sauce (Sweet Baby Ray's Original)
1 can black beans
1 can corn
Grated cheese (mix of cheddar and monterrey jack, but any will do)
Ranch dressing
Squirt a little bbq sauce in the bottom of a baking pan. Put the frozen chicken breasts in and cover with more bbq sauce. Bake at 375 for 45-50 minutes.
Meanwhile, rinse the lettuce and chop/tear it up.
Rinse gunk from beans. :) Then let them dry on some paper towels, so that when you add them to the lettuce it's not all wet. Drain the corn and let those dry a little too (but you don't need to rinse the corn).
When the chicken is done cooking, let it cool a little, then put it in the fridge to chill. Then cut it up or shred it, whatever you prefer.
Mix the lettuce, corn and beans. (You could also add chopped tomatoes, avocado, chopped bacon, cucumbers, etc.) Add the chicken, then cover with cheese.
I also had those French's onion to add if you want a little crunch.
Serve with ranch dressing and additional bbq sauce.
