Apple Fritters


INGREDIENTS

1 cup cornstarch (or flour)
1 tsp baking powder
1 tsp salt
2 tsp sugar
2 eggs
3/4 cup milk
2 tsp oil
2 large apples
oil for deep frying
confectioners' sugar or cinnamon sugar for dusting


DIRECTIONS

Sift together flour, baking powder, sugar, and salt.

Combine egg and milk and oil; add to flour mixture; beat until smooth.

Peel and core apples; cut each apple into 8 wedges (or 1/2-inch slices).

Dip apple wedges (or slices) into batter and fry in 370 degrees F oil a few at a time, turning once, until brown.

Drain on paper towels and dust with confectioners' sugar.

Is cornstarch or flour the best option?

@Mrs. Diner - because I am gluten-free, I use cornstarch. But many of my friends use flour instead. It's your call on how you want to make it, but either way works really well.

what kind of oil do u use.

@Anonymous - I use canola because that's what we always have in the house. But you could use any other oil you feel comfortable deep-frying with.

The batter was a little too runny with the cornstarch to coat them fully, endes up adding an additional 1/4 cup flour to batter and it works great. Great with coconut oil ! Tasty stuff
