Recipe: Walnut Vegetable Dip

With a texture and taste surprisingly like chopped liver, this appetizer is a hit with EVERYONE who tries it. I am constantly giving out the recipe so I decided it was time to post it here. Originally the recipe called for a can of Le Soeur peas, but I switched to frozen organic peas to make it real. I also soak and dehydrate the walnuts so that they are crispy and easy to digest. This recipe is perfect for those on the SCD or GAPS diets and a real party pleaser.

Walnut Vegetable Dip

Ingredients

Two cups cooked organic peas (start with three cups of frozen peas as they shrink when cooked)

One medium onion sauteed in extra virgin olive oil until browned and soft

3/4 to 1 cup walnuts that have been soaked and dehydrated (where to buy soaked and dehydrated nuts)

two hard boiled eggs

salt and pepper to taste

Instructions

  • Steam or boil the peas until they are soft and then drain
  • Chop a medium onion and saute until browned and soft
  • In a food processor processor the walnuts until they are chopped small
  • Add the peas and onions and process until the mixture is smooth
  • Add the salt and pepper and mix
  • Remove from processor into a bowl and hand chop the two hard boiled eggs leaving a little as garnish
  • Chill before serving

    That recipe is actually almost the same as one my mom used to make, which WAS called “Mock Chopped Liver”! I make my mcl now with green beans, but peas sound like a wonderful option. And a nicer color, too! ;)

    I actually love liver, but I know not everyone agrees. Will definitely give this one a try as I love every single ingredient in it. Walnuts pack such a nutritional punch. I was just reading that they are by far the healthiest of the nuts most commonly used. Healthy and pretty dip–thanks!

    Actually liver is an amazing nutrient dense food — so I wouldn’t stop eating that — but this recipe is a very healthy dip that may replace some of the packaged varieties.

    Hi, I have to say I was very interested in this recipe because I love dips. But I am not sure what its supposed to taste like, and sorry to say this afternoon when I made it, I didn’t enjoy it as I thought. I was disappointed that to me, it just tasted like peas with a walnut dryness taste… maybe this is what chopped liver is supposed to taste like, not sure. Anyway, I think if I were to make it again I would definitely add garlic and some spices… not sure which. Oh, my youngest liked it however, he’s 16 months and LOVEs anything dip like. :) So it wasn’t a total loss!
